Cupcakes and a lesson :)

Okay so last week I promised cupcakes. Partly because I’m still in the baking mood from the holidays and mostly because I’ve wanted to try out these cool new cupcake mixes Betty Crocker came out with called FUN da-middles.

I figured today would also be a good day to surprise Lexie when she gets home from school. You know, trying to earn as many ‘Best Mom Ever’ points while I can…she turned 10 last month, which means I’m not far from becoming Themeanestmotherintheworld! (yes, it’s all one word, it looks a lot meaner that way 😉 )
Anyway, I grabbed my box of fun da-middle mix and prepared it according to the directions on the package. And sat there for a sec realizing I could lick the bowl because Lexie wasn’t home, and if I was quiet Brandon wouldn’t know what I was up to. SCORE!
Until I had made a couple of swipes with my finger, looked over and saw this:

 
Yep!…oh well!
Once they were done I put them on a cooling rack. And after about 10 minutes decided I needed to try one out. Please, please for the love of the roof of your mouth, let them cool longer than 10 minutes! The filling is HOT….which the box also warned me about. Oooops!
Since these are going to be for Lexie I decided to frost them in some of her favorite colors and sprinkles. I had some of the new fancy-schmancy frostings in a can so it made that part a lot easier too.

I was having fun: sprinkling frosting, sprinkling some more. That is until Brandon came in and decided he wanted to eat decorate a few.

So there you have it folks some quick and easy cupcakes with a surprise in the middle 🙂 You really don’t need to put frosting or anything on them they’re good without it too….once they’re cooled off that is.

    These look amazing!! I will have to try them out at home soon too 🙂 My son loves “happy cakes.”

      Awwww 🙂 These were super easy, and Lexie loved the ‘surprise’ in the middle!
